1 ½ lbs. boneless chicken breasts or thighs
2 7-oz. boxes black-eyed peas & rice (or red beans & rice)
1 28-oz. can diced tomatoes
1 1-lb. bag frozen cut okra
Spray aluminum pan with non-stick spray. Cut chicken in 1-inch
cubes. Put chicken & tomatoes in pan. Cover with aluminum
foil & bake at 400 degrees for 20-30 minutes (until chicken
is no longer pink). Meanwhile, cook rice according to package
directions. Add rice & okra to cooked chicken mixture &
mix well. Write “Chicken Gumbo” on the foil. FREEZE.
