June 2005: EASY LASAGNE
1 lb. ground beef, turkey, or soy equivalent
9 UNCOOKED lasagne noodles
1 28 oz. can crushed tomatoes
8 oz. Ricotta cheese
1 15 oz. can tomato sauce
8 oz. shredded Mozzarella cheese
1 ½ t. dried oregano
4 oz. grated Parmesan cheese
Brown ground beef. Meanwhile, put tomatoes, tomato sauce and
oregano in a large pot; cook 5-10 minutes, crushing tomatoes as
they cook. Add meat to pot. In the aluminum pan provided, make
layers of lasagne as follows: 1/4 of the tomato/meat sauce, then
3 lasagne noodles, then 1/3 of each of the cheeses. Repeat this
sequence 3 times. Put remainder of sauce on top and sprinkle with
a little more Parmesan cheese. Cover tightly with aluminum foil.
Bake at 350 for 45 minutes. Write “lasagne” on the
foil. FREEZE.
