HAMBURGER - BARLEY STEW  

1 1/2 lb. ground beef, turkey or soy equivalent

1 16-24 oz. bag frozen mixed vegetables

1 onion, chopped

2 t. salt

1 28-oz. can diced tomatoes (undrained)

1/2 t. pepper

4 cups water

1 t. garlic powder

1/2 (11 oz) box instant barley (near rice, in Harris-Teeter)

2 t. thyme

Brown ground beef, turkey, or soy. Cook onion in pan with beef or in microwave. Put ground beef, onions, tomatoes and water in a large pot and bring to a boil. Add barley to pot and boil for 30 minutes, adding more water, if necessary. Spray aluminum pan with non-stick spray. Ladle or pour stew into aluminum pan. Add remaining ingredients and stir. (There’s no need to cook the stew any further.) Cover with aluminum foil; write “Hamburger - Barley Stew” on the foil. Freeze.
