September 2007: CHICKEN GUMBO

1 ½ lbs. boneless chicken breasts or thighs

2 7-oz. boxes black-eyed peas and rice (or red beans and rice)

1 28-oz. can diced tomatoes

1 1-lb. bag frozen cut okra

Spray aluminum pan with non-stick spray. Cut chicken in 1-inch cubes. Put chicken and tomatoes in pan. Cover with aluminum foil and bake at 400 degrees for 20-30 minutes (until chicken is no longer pink). Meanwhile, cook rice according to package directions. Add rice and okra to cooked chicken mixture and mix well. Write “Chicken Gumbo” on the foil. FREEZE.
