MASHED POTATOES & BEEF BAKE
1½ lbs. ground beef, turkey or soy equivalent
3 c. water
2 cans condensed cream of mushroom with roasted garlic soup
4 T. butter or margarine
1 1/8 c. milk
1 ½ T. Worcestershire sauce
3 c. instant mashed potato flakes/buds
24 oz. frozen mixed vegetables
Brown ground beef in skillet; drain off the excess fat. Stir together the meat, soup, Worcestershire sauce and vegetables. Spray aluminum casserole pan with cooking spray. Pour meat mixture into pan. Meanwhile, heat the water, butter and remaining ¾ can of soup over high heat, until boiling. Remove from heat and stir in the milk. Slowly stir in the potatoes. Spoon the potatoes over the beef mixture. Bake at 400º F for 20-30 minutes, until slightly browned. Cover with aluminum foil and write “mashed potatoes and beef bake” on the foil. Freeze. |
